    How clever guys! In a duel cooking session with me and my guy, we followed your instructions. We successfully made a huge mess and the wonderful kitchen fragrance!     Hey guys! This looked amazing, so I tried it out for dinner tonight and the chicken was amazing, but I had some trouble with the rice! I'm not sure if I used the wrong rice, but when I took the chicken out after 40 minutes the rice was still crunchy... I ended up having to cook it kind of like risotto by cranking up the temp in the oven until the liquid was bubbling and adding more and more chicken broth until it was absorbed and the rice was soft (like 25-30 minutes later). I used long grain white rice, is that wrong? I would love to know because it tasted incredible!

    Ben...I know you got that meaning from Wikipedia, but I don't believe that's factual at all. To jerk meat doesn't mean to poke holes in there at all. Since "to barbecue" is to roast over an open flame, Jerk is a method of barbecuing. The same principle of cooking over open flames applies, difference being that the meat is marinated in jerk seasoning.

    If you do do this on the BBQ grill keep the extra bits of fat you cut away and use it to oil the grill. Because you don't want to cook this too quickly on a BBQ the coals shouldn't be too hot and won't burn the chicken fat. Adds a bit more to the smoky taste from the BBQ itself and if you use a gas BBQ then it also adds a level up there as well.

    The way chicken was placed on top of rice while cooking in the oven is the best part , all the steam, the flavours from chicken to rice and then from rice to chicken makes an amazing delicious taste, loved this method .

    So this has been bothering me for a bit now, but the narration from Mike at the end with the suggested videos seems to be a little off? It seems like you've got the videos you actually put in those slots backwards, and sometimes the videos you put in those slots don't seem to correspond at all to how you've got them labeled.

    The video that should be on the left here, for example, SHOULD be the chicken Q&A video rather than the chicken parm video that you've got on the right (because somehow they've been put in backwards?). And I think it would make more sense if the "chef's special/one of our favorites" videos weren't something really recent, but maybe something that dates back to another season or one of the other series or a recipe that might be related to the current one (whether by protein or culture or useful tips)--or, possibly, the mystery box that started this week's theme.

    I don't know what exactly makes you decide what goes where, or if some kind of algorithm on YouTube forces the way the videos show up on the screen, but it's made your intent a little confusing.

    (Other than that, I LOVED the video. This looks like the perfect weekday recipe. Super quick and easy, I can't wait to try it!)

    Edit: I'm realizing that the apple cake video might be up as the suggested video because it was sponsored/an ad, so I'm understanding the choice there, now. But still--the backwards slots!

    I like to make my jerk marinade from scratch. It enables me to tailor the level of spice for certain people in my family. Though I have never cooked a chicken the same way as you guys have done in this video, I still believe in using fresh lemon juice to wash the chicken with first. Not only does add flavour, which you made up for using the lime zest, it also kills any bad bacteria which could make it through the cooking process. I say could, and the chances of it happening are minuscule, but you read about food poisoning from incorrectly prepared chicken and this extra step can minimise that.
    Washing a chicken in lemon juice is a practice that most Jamaican people, and people with Jamaican heritage, I know do. I think it is partly based on fact, for the reasons on why to do it, but also culturally ingrained from parent to child. I know it was for me.

      Ilana Signal one of the things that would make authentic jerk is the chicken should be smoked with pimento wood to impart some flavour. There's really no poking holes but it makes sense to get the marinade into the meat I guess
