    I just made this but I added one piece of kombu kelp in the dashi stock and 2 tablespoons of wakame kelp in the soup. It tasted so good! Thanks!

      so did I! It was a packaged miso concentrate but the flavor was definitely unique and like nothing I've ever had before :) (although it did remind me of tamarind paste in a way?)

    I'm planning to make miso soup soon but I cannot stand onions. The only flavour substitute I can think of is garlic... I have seen that a lot of savoury recipes call for daikon but I cannot get them here. Any ideas?

      Green onions can be left out. Just really a garnish. There's other types of miso soups so you might want to look around for more recipes

      What I do is take screen shots of stuff. and walk thro the store and find them.. if worse case i cant find something. I'll show the picture to someone who works there. :) that helps me all the time.

    Bonito flakes are expensive in the country that I'm living in... Can I substitute dashi with diluted bonito soy sauce?

    I cant seem to find dashi where I live, but we do have something called "fish stock" by a western brand called campbells. They make chicken stocks and soups and what not. Would that be the same as dashi? And even if it were different, would it still be acceptable to use instead of dashi? I cant find dashi or bonito flakes anywhere, since its pretty uncommon to get foreign foods around here.

      +GeneralChickenPeice If you're from the US or Canada just use amazon or find an online Asian food store. I'm from the UK and although there are probably some Asian supermarkets I could find I prefer to just purchase online. If you are from the UK, not sure if you are, there is an online shop called JapanCentre which has daishi.

    A suggestion when making the dashi, I usually first put a a 1 1/2 inch square of konbu dried seaweed in the water and boil for 3 to 5 minutes before putting in the bonito flakes, I find it adds depth to the flavor of the dashi.

      +Katarzyna Hoinka If you have an Asian market near you you can purchase an instant dash product called Hon Dashi. It is the equivalent to instant chicken broth. It is in the form of a powder but beware it does contain MSG. Home made is best and it just takes minutes to make.

      +Motaki666 It can taste like.. ANYTHING!!!! The magic of tofu!!! Haha, well jokes aside it honestly absorbs flavours really well so you can make it taste a certain way depending on what you want. I love having it in sweet & sour sauce, or fried and put in gochujang (spicy Korean paste). The possibilities are endless.

      Hello!
      Tofu is basically a soymilk solutions mixing with a coulant agent.
      It doesn't have much taste as it is but it absorbs seasoning very well! :)
      They have a video about tofu. Make sure you check it out :D

    I love miso soup but I didn't know it has fish broth... I don't like fish, so it's weird that I liked it at wasabi place, is there a way to do without fish broth? Or I just have to live with it haha

      You might also want to try Chanko Nabe which is a delicious hearty, healthy soup. It usually also starts with a base of the fish dashi but it also has chicken soup as part of the base along with soy, mirin and sake. So here I think if you skipped the fish dashi and only used a chicken soup base you would be alright. You can check out the "famous cuisine channel" on you tube recipe for (chanko Nabe) or Sumo Stew. You might enjoy this. Be Blessed.

      I see. The basic broth for Japanese soups is made from dried bonito " a part of the tuna family" flakes Konbu which is a dried kelp sea weed and Miso ( there are hundreds of varieties of miso the most common in dashi stock is a kind of white miso). There is also a fairly common but not in america so much red miso used in the dashi stock. These are always the three main ingredients for Miso soup. Are you allergic to all fish or only shell fish? If only shell fish this might not be a problem. However, you should check with your doctor first before trying.

      How did you find out that you love miso soup if you are allergic to it? Did someone make a veggie broth for you the first time you had it? Seems like eating most Asian cuisine is asking for trouble with a fish allergy.

    How many days survives a Miso soup in the fridge? The idea is to prepare Miso soup for a couple of days in advance as I want to have it for breakfast, so I only have to heat it up again.

      +director1111 If you make the dashi ahead of time the day before, just adding the tofu, scallion, and and miso when you want to eat the soup your whole prep time will be less than 10 minutes. Hope this helps.

      Well, no. Though you can use the paste to make the dashi. As for the miso paste, it is a quintessential ingredient, and as such is absolutely necessary.

      +TheFettuck Well, noodles aren't traditionally in Miso Soup but, you can turn it into Miso Ramen and use udon instead of ramen or spaghetti.
